popovers!

yes, hugs are important. another way of showing love? make them popovers. ana over at i made it so asked for the recipe, so i thought i’d share it here for everybody. these are easy and basic and so good. eat them warm with lots of butter. they’re good the next day, too, at breakfast, with honey. they’re great for sopping up saucy stuff or stew, or whatever else. really, they go well with anything. plus, popovers are special and fun, and always feel novel, no matter how many times you eat them.

preheat oven to 425.

without over-mixing (this is important), stir together:

1 cup flour

1 cup milk

1/2 teaspoon salt

1 tablespoon melted butter

2 beaten eggs at room temperature

pour batter into pans (once upon a time, we used to use custard cups, but they all got broken, & now we use these.)

bake for 35-45 minutes. start keeping an eye on them at 35 minutes or so, but you’ll want to wait until they pop and look yummy and brownish and done. when you break them open, they’ll steam! enjoy!

    • oh, you aussies are missing out! they’re sort of like a custardy-in-the-middle bread-like roll. while cooking, they pop up and there’s a lot of air inside of them too. very nice with stews and saucy dinners! xo
